Cocoa beans from the Bejofo estate in Madagascar, an enormous property that cultivates world-renowned cocoa. After the fermentation process, the beans are placed in the sun to dry for 2 hours on the first day, 4 hours on the second day, and 6 hours on the third day. After that, 8 hours a day.
They call this "Slow Dried" because it is a much slower process than Friis/Holm Madagascar 64% Fast Dried chocolate, where the beans dry 8 hours a day from day one. The difference in the drying process gives a completely different flavor profile, even though they both have clear and quite simple flavor profiles.
Madagascar 64% Slow Dried is slightly more complex compared to Madagascar Fast Dried and has notes of raspberry.
