Cocoa beans from the Bejofo estate in Madagascar, an enormous property that cultivates world-renowned cocoa.

The reason we call this 'Fast Dried' is that after fermentation, we dry the beans in the sun for 8 hours a day at the start. This is in contrast to our Madagascar 64% Slow Dried, where the bean drying process is much slower.

This results in a very different flavor profile. Madagascar 64% Fast Dried has an acidic and more spontaneous taste. A very pure chocolate.
